Rice cooked with spices, a handfull of sweetcorn, a finely diced carrot and some juicy prawns, and a little tub of blueberries for dessert.

Chicken curry and rice (both a gift from a Bangladeshi friend), blanched snow peas, carrot sticks (with hummus hidden under them) and blueberries to finish. Tasty!
A ton of fruit and veg, a massive strawberry, cherries and blueberries, and a wee stir-fry (baby corn snow peas, mushroom and chilli).
Brand new glass, fruit juice and at long last a bit of sun to enjoy being out my back again. Perfect. To top it all off a really simple but delicious lunch, roasted chicken legs with hot sauce and a ton of strawberries. Made my day.
Can't remember where I picked up this recipe, but it goes great with hot wings. Hot Sauce 50ml olive oil 100ml chilli sauce (the ones which are 90 odd percent chilli) 40ml approx lemon juice Mix ingredients in a bowl until combined, enjoy! Using up leftovers again, half a small salmon fillet, the end of a pack of smoked salmon, half a sheet of nori and half a boiled egg on top of plain rice, easy does it :)
Above we have a mixed vegetable stir-fry with snow-peas, baby corn, mushrooms and onion. They were fried in a little oil and chilli, garlic and soy sauce were added near the end. The dessert had black and green grapes, kiwi and sliced plums.
This picture was taken in work, and if I had been less hungry I would have mixed the sections a little to show all the ingredients, but hindsight is 20/20, I'll just have to remember for next time. The photos really make it look like there was a lot less variety than reality, you can just spot a little kiwi in the top, but the stir-fry looks like pure corn and snow-peas. Picking out a few snacks for myself and The Giant, soy sauce eggs, pickled eggs and chicken breast strips.
The chicken was marinaded in light soy sauce, honey and a little pepper, I then quickly grilled them. Posting quite late tonight, we were doing a ton of stuff about the house today, then relaxed watching a few shows and eating Got this little guy on sale from the paperchase in Belfast a while ago, just realised he hasn't been online yet to say hello. Top tier holds green and red grapes and a few blueberries, in the bottom there's a layer of rice topped with smoked salmon, tonnes of prawns and some broccoli stalk fried with soy sauce.
Normally I use this box when I'm having a snack, as it's a little small for me, but I made this one for my friend who has a much smaller appetite. She wolfed it down. Assignment 2b : to find the right bento box to suit my eating habits. I use a few different boxes, depending on what I'm bringing, e.g. if I'm bringing sauce and rice separately I use my little samurai (he gives me extra room for a bowl of soup too!). The other boxes are mostly the same size, 400-500ml, which is perfect for me, except for my large black one but I only use it if I know ill be too busy to have a snack or if dinner will be a lot later, even then I rarely finish it all if it is packed tightly. I stick to plastic boxes, as glass would be way too heavy and I worry that I would wreck a fancy wooden one. Nearly all of The Giants bentos go in take-away cartons, he really dosnt want to have a 'girly' bento box, he wont even take the black man-sized one... I got a new box last week as well, The Giant got it for me for valentines :)
Check the last post for a wee nosey at it. WLF - Whats Left in the Fridge? Using my brand new box today. It was my valentines present from The Giant (he knows me so well!) It has a large bottom section with a moveable divider, and a slimmer tier to hold the matching cutlery that came with it. Managed to squeeze a few treats in there too. I think the top middle one looks like a pineberry, I asked The Giant but he didn't even know what I was talking about, what do you think? Managed to get a few blueberries and a bit of chocolate (also from valentines) into the top tier, in the next level we have baby carrots, dried fruit mix (cherry, cranberry, raisin), two chicken wing pieces (baked not fried), three fresh cherries and a nice big portion of fried rice with prawns, red chilli, baby corn, scallions and an egg from our girls out the back.
Not the healthiest of lunches but, damn was it good. Had to make do with what I could find in the kitchen, we really need to do a shop. Hopefully will get time tonight. |
