A bento! Two days in a row! Not possible, yet here we are...
Not so pretty lunch today. This was a plain but delicious bento. Rice with furikake (nori and sesame), carrots in sweet chilli and sesame glaze, and salmon fillet (grilled and topped with shichimi togharashi). Looks way too orange and white, should have added a little green for the Irish flag maybe :P But we make do with what we can find in the fridge, I plan to have something more colourful and interesting tomorrow, Fingers crossed, wish me luck.
Carrots In Sweet Chilli and Sesame Glaze
2 medium carrots
2T sweet chilli sauce
Splash of gluten-free soy sauce
2T sesame seeds (I used white but black would give a better colour contrast)
1t oil (for frying)
Slice the carrot (5mm approx) and add to oil in a frying pan over medium heat, give them a few minutes on each side then add the sesame seeds. Fry, stirring occasionally until the sesame seeds start to pop, add all other ingredients and a little water if needed, mix well and turn the heat up and stir frequently. Once the sauce has thickened turn the heat off and allow to cool before packing in your bento.
