OK, it's a bit of a cheat, this bento isn't from today. I started photographing my lunches prior to making Bento NI just to work on my presentation, trying to imitate the ones I had seen elsewhere on the web. It does however have a lot of colour! Which my last post was sorely missing. On the far left we have mixed vegetable stir-fry, with carrot, bean sprouts, broccoli and a little of my easy stir-fry sauce, in the second tier we have a yellow plum, cherries, blueberries, some cheddar and a little treat my parents brought me back from their holidays (I couldn't resist! I love the mini ones and they are so hard to get here). All in my little blue dragon-fly box, which was a present from my best friend.
Simple, cute and just the right size, I have the best friends ever. Even came with a matching bag and chopsticks in a little pouch.
Easy Stir-Fry Sauce
1T sweet chilli sauce
1t mirin
pinch chilli powder/chilli flakes (or finely sliced red chilli if you like the kick!)
1t gluten-free soy sauce (or more to your taste)
grind or two black pepper
Mix all ingredients together (if it seems more thick than runny thin it with some water) add to stir-fry a few minutes before fully cooked and let it thicken and coat everything in the pan. Done! So easy but tastes great.
This bento is a rare (for me) vegetarian meal, replace the cheese and chocolate with some fried tofu or a few dates and its vegan even. I am however a definite carnivore, along with the Picky Eater Giant, who today had a practical duplicate of yesterdays bento, which I failed to photograph before he left for work.
